Sup Ayam Simple = Chicken Bone Broth Soup Recipe

This chicken broth soup is hearty and warming which is perfect for the colder seasons or when you just need a warm hug in a bowl.

Ingredients:
3 shallots
2 garlic
4 chicken drumsticks
1 cup water
1 cube chicken stock
2 teaspoons salt
2 spring onions
1 handful celery leaves
1 carrot
This recipe makes about 2 bowls of soup.
Method:
Chop up the garlic and shallots into small pieces, ideally use an electric chopper it will save you so much time.
Heat up some oil in a pan and cook the chopped garlic and shallots.
Not long after add the chicken drumsticks to brown for about 10 to 15 minutes, you can use any part of the chicken, the bones and skin will add so much flavour to the broth. Keep turning, it doesn't have to cook right through, this is just to help release some of the fats.
Add some black pepper and fill the pan with water to cover the chicken, keep the heat to a medium and simmer the soup. I've used large chicken pieces so it will take a good hour and a half to fully cook.
Then halfway through simmering just add a chicken stock cube to give some depth.
To make this soup even more inviting add some spring onions and celery leaves which are very similar to parsley, you can just take the leaves from celery stalks, make use of them instead of throwing them away.
Give the soup a try and season with salt to your desired taste.
Towards the last 10 minutes of cooking add some sliced carrots. At this point you can separate the chicken bones from the soup before serving, that is totally up to you.
You can also enjoy this soup with some potatoes or pasta to make it even more of a meal!
What does chicken broth soup taste like?
In this particular recipe I have kept the seasonings very mild and simple to keep the flavour light but soup is versatile so add whatever spice and aromatics you desire. Using ginger in particular can also give it some heat, again it's down to individual preferences so you must taste and season as required. Chicken broth soup has an umami savoury flavour with a delicate aroma of chicken, it is simple but flavourful.
This is one of the many chicken soup recipes made often in Indonesia, over there it is called Sup Ayam, it's usually enjoyed with rice, prawn crackers and sambal which is a grounded chilli relish. Sambal is a delicious accompaniment in most foods.
